This easy chicken curry is a flavorful and comforting dish made with tender chicken simmered in a rich, aromatic sauce infused with spices. Served over fluffy white rice and topped with fresh cilantro, it strikes the perfect balance between warmth, simplicity, and bold flavor. Ingredients

You Will Need

    • Olive oil (for cooking)

    • 600 grams skinless chicken breast, diced into 2–3 cm cubes

    • 1 teaspoon paprika

    • 1 teaspoon ground pepper

    • ¼ teaspoon ground cinnamon

    • 4 shallots, finely chopped

    • 1 garlic clove, finely chopped

    • 1 tablespoon grated ginger

    • 1 can coconut milk

    • 1 cup chicken broth

    • 3–4 tablespoons red curry paste, adjust to preferred spiciness level

    • 1 tablespoon fish sauce

    • 2 cups baby spinach

    • 1 tablespoon lemon juice

    • ¼ cup fresh cilantro, chopped (and a bit more for decorating)

    • 1 handful fresh basil

Tender chicken in a rich, creamy coconut curry infused with bold spices, fresh herbs, and a touch of heat—comforting, quick, and packed with flavor.

Instructions

  1. In a bowl, toss the diced chicken with a dash of olive oil, paprika, ground pepper, and ground cinnamon. Set aside.
  2. Heat some olive oil in a skillet over medium heat. Add the chopped shallots, garlic, and grated ginger. Sauté for about 5 minutes until fragrant.

  3. Add the seasoned chicken to the skillet and cook until browned, about 10 minutes.

  4. Stir in the coconut milk, chicken broth, red curry paste, and fish sauce. Let it simmer for another 10 minutes.

  5. Fold in the baby spinach and cook until wilted.

  6. Add the chopped cilantro, fresh basil, and lemon juice. Stir to combine and adjust salt and pepper to taste.

  7. Serve hot with steamed rice and enjoy!
