Seared Salmon with Herb Butter Sauce

You Will Need:

  • Infinite Herbs Holiday Fish Blend – Parsley, Tarragon and Dill, ¼ cup, finely chopped
  • Salmon Filets, 4 each, 4-ounce portions, skin removed
  • Lemon Zest, ½ Tbsp
  • Garlic, 2 large cloves, finely chopped
  • Shallot, 2 Tbsp, finely chopped
  • White Wine, ¼ cup
  • Butter, 2 Tbsp, cold, cut into cubes
  • Olive Oil, 1 tsp
  • Salt, 1 Tbsp
  • Pepper, 1 tsp

Recipe Serves: 4
Instructions:
1. Preheat a large sauté pan over medium high heat
2. Rise fish inside and out and thoroughly dry with paper towels. Brush each fish evenly with the olive oil, then season with salt and pepper
3. Sear fish 5 minutes on each side, then remove from pan
4. Add shallot, garlic, wine, and lemon zest to the pan and cook 1-2 minutes or until wine reduces by half. Reduce heat to low and stir in cubes of butter. Once butter is incorporated into the sauce, stir in the herbs, then return fish to the pan and cook 2 minutes longer, spooning sauce over the tops to coat.
5. To serve, place fish filets on a platter and pour remaining sauce down over the top. Garnish with extra lemon wedges if desired.
