Macerated Peaches w/ Opal Basil

You Will Need:

  • Peaches, 4 each, ripe
  • Opal Basil, 1 oz, chopped
  • Lemon Zest, 1 tsp.
  • Lemon Juice, ¼ cup
  • Sugar, 1 cup

Recipe Serves: 6

1. Peel, pit and quarter the peaches and place into a bowl with the basil.

2. In a saucepan, mix the water, lemon zest and juice and sugar and bring to a boil, ensuring the sugar dissolves, and let simmer to 3 minutes.

3. Pour the hot mixture over the peaches and basil and let stand and chill for 2-3 hours prior to serving.

*This is great on its own or served warm over ice cream, french toast, pancakes or a piece of cake.
