To store fresh Savory, wash and dry leaves then wrap in a paper towel and place in a plastic bag in the refrigerator for up to 5 days.
Savory can also be frozen. Finely chop the leaves and add to ice cube trays filled with water. Once the cubes are frozen, transfer to a plastic bag or airtight container. Usage Ideas: The bold peppery flavor of Savory is commonly paired with fresh green vegetables. It also works well with cooked beans such as lentils.
The leaves are somewhat tough, so unlike most other herbs, Savory should be added to your dishes during the cooking process so that the heat can help release the flavorful oils. Fun Facts: In Germany, Savory is often added to dishes containing beans because the herb can help aid in the digestion of the fiber in legumes (12)
In ancient Rome, Savory was infused into vinegar and used as a condiment for many popular dishes (12)
